I’ll bet some of you are wondering if I’ve said about everything I can about zucchini in the last four years between the blogs and the cookbook I wrote. Maybe I have, but I keep planting it in the garden every year which encourages me to create new recipes, and well, then I have to talk more about zucchini!
For this recipe, I took three vegetables whose growing seasons ever so slightly overlap to make this salad. Broccoli peaks in late spring, zucchini is a mid-summer crop although can continue to produce into late summer, and corn is a mid to late summer crop. And voila! It’s a salad.
A drizzle of good balsamic vinegar adds a tangy/sweet flavor.
Add feta and mix together.
Eaten as a side dish, or vegetarian meal, it’s great!
