4-Ingredient Pineapple Chicken

Are you looking for an easy recipe? Did I say easy? I meant super easy! Four ingredients tossed into a crockpot and it’s dinner. And I’ll bet you can figure out what two of these ingredients are. 🙂

After the busy times around the holidays, I wanted to make an easy recipe where I could just throw a few ingredients into a pot to cook and call it dinner; that, and the fact that I was reminiscing about our trip to Hawaii at the end of 2019. What does one have to do with the other?  The photos of Hawaii brightened a gloomy January day. And then, I just had to make something that would bring back a few flavors of our visit.

There wasn’t a rainbow visible at the waterfall the day we visited, but the next photo shows a rainbow outside our room.

Now that we’ve enjoyed a bit of nature, let’s get dinner started! Cut up a chicken breast into bite-sized pieces. Add to the crockpot. 

Add pineapple chunks with juice from the can, brown sugar, and soy sauce to the chicken and you are done!

The recipe does not photograph well, but was the perfect balance of flavors. 

Mixed with rice, this pineapple chicken hit the spot!
