Planning a get-together with family or friends and want an easy meal? These Fun Fajitas for Four or More is the answer! It’s cooked in a slow cooker so you don’t have to pay attention to it until it is done, leaving you time for other important tasks in the kitchen.
Fajitas is one of my favorite Mexican food dishes. It was an experience to see my fajitas fresh off the flame coming towards me in a restaurant (back in the day) on a platter with “fixings.” After leaving Southern California and moving to Oregon, I realized it is a challenge to find good Mexican food, even fajitas.
It’s also a very economical dish because you don’t need a lot of expensive ingredients to make this recipe zing! The seasoning does all the work to make these chicken fajitas a favorite. Add your desired toppings and it’s a meal!
Just chop a few ingredients.
Place the chicken in the slow cooker and let it cook away!
I made this recipe with one large chicken breast, easily enough for 3-4 people once shredded and fajita toppings are added. Unfortunately, the fajitas were gobbled up before I could capture the finished dish, plated with toppings. Yes, that’s how good it is!

Fun Fajitas For Four or More
Ingredients
- 1 large chicken breast
- 3/4 cup diced tomatoes with Jalapeños
- 1/2 cup red, orange and yellow bell peppers sliced
- 1/2 cup red onion diced
- 2 cloves garlic minced
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- dash pepper to taste
- 1 1/2 teaspoons lime juice
- 1 teaspoon honey
Instructions

Pour tomatoes, peppers onions and garlic into slow cooker. Top with chicken

Sprinkle seasonings over chicken and cook on low for 6 hours. Check to see if chicken is cooked through. If so, remove chicken and shred - then return to the slow cooker.

Whisk together lime juice and honey in a small bowl. Add to slow cooker and gently toss to combine. Serve with tortillas and desired toppings (Cheddar cheese, sour cream, avocado, etc.)
