Having a Crabby Day? This Crab Sandwich Will Put a Smile On Your Face


Fresh crab meat can be expensive. That’s why I decided to try imitation crab for this recipe. You can find a variety of imitation crab products, most using Alaska pollock (from the North Pacific) as the main ingredient. There are pros and cons of eating imitation crab, so make sure it fits your dietary needs. Of course, if you have real crab meat, fresh or canned, it will be great in this recipe too.

Open-Faced Crab Sandwich

Ingredients

  • 1 package imitation crab
  • 2 tablespoons salad dressing or mayo
  • 1/2 stalk celery finely chopped
  • 1 thick slice of red onion finely chopped
  • 1/4 cup cheddar cheese
  • salt and pepper to taste
  • Sliced tomato (optional)
  • Hearty bread slices like sour dough, dense herb bread, etc.

Instructions

  1. Slightly pre-toast bread.
  2. Chop crab pieces and mix with mayo, celery and onion.
  3. Top bread with crab mixture.
  4. Sprinkle cheddar on top.
  5. Toast open-faced sandwiches in oven until cheese is slightly charred.
  6. Top with tomato slices and add salt and pepper to taste.
