Pork Chops & Eggs – An Old School Coffee Shop Favorite


Here’s a thought, when you have a small portion of leftover meat from last night’s dinner, why not add it to the next day’s breakfast or lunch? I have to confess that my husband is the “King of Opposition” when it comes to eating leftovers. What he doesn’t know (and please don’t tell him) is that he eats leftovers all the time disguised as something new. I learned this technique from my grandmother. When I was a kid and my Italian grandparents lived with us, my grandmother was always recreating a meal with leftovers. In fact I remember one night when I was young asking her “What was this when it was new?”

So when my husband mentioned adding last night’s leftover pork chop to today’s breakfast I was shocked. Then I remembered that back in the day you would find “pork chops and eggs” on the menu at a coffee shop/diner frequently. Not my fav but thought I would give it a try. 

I used poached eggs in this recipe. We need to start with the poached egg technique that my husband created. I mentioned this technique before but not the back story. When we were visiting Dick’s mimg_5299other in Florida many years ago, and she did not have an egg poacher, he figured out how to make 6 poached eggs cook evenly and “neatly” in one pan. It was a challenge but he is an engineer after all and embraced that challenge.

He took a large fry pan, filled it with water and put a 6-part muffin/cupcake pan in the middle. It floated nicely as any poacher cup would. Next he sprayed the individual cups with Pam (or cooking spray), and dropped an egg into each cup. He covered the pan and a few minutes later, he had 6 perfectly cooked poached eggs. Genius! (Well at least I let him think so!)

Pork Chops & Eggs

Ingredients

  • 2-3 eggs (poached or fried)
  • Leftover pork chop (or other leftover meat)
  • 1 red potato chopped
  • 1/2 onion chopped
  • Olive oil and/or btter

Instructions

  1. Bake or microwave potato. When softened, chunk and add to frypan with onions and oil.
  2. Saute potatoes while eggs cook.
  3. Poach or fry eggs to your liking.
  4. Warm up pork chop or desired meat.
  5. Plate everything and enjoy!
