Yummy Gingersnap Cookies

  • 2 cups sugar plus sugar to sprinkle on top
  • 1 1/2 cups canola oil
  • 2 large eggs
  • 1/2 cup molasses
  • 4 cups all-purpose flour
  • 4 teaspoons baking soda
  • 3 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt


  1. PREP: Preheat oven to 350 degrees F.
  2. Combine sugar and oil in a large bowl. Beat in eggs and then add molasses into the mixture.

  3. In a separate bowl, stir together flour, baking soda, ginger, cinnamon, and salt.

  4. Mix the wet and dry ingredients together and form into balls. Roll the balls in sugar.

  5. Place the ginger balls on an ungreased baking sheet about 2 inches apart.

  6. Bake 10-12 minutes. Cookies should spring back when lightly touched. Remove to cool on wire racks.
